Most golfers should be looking at Quantum Max, and Max OS if you want the widest sole and the most help getting the ball up. Apex AI150 is the crossover: a players shape with more forgiveness built in than it looks like it has. AI300 is for single figures.

Quantum Max or Apex?

Quantum Max if you want maximum forgiveness and a higher flight. Apex if you are a single-figure handicap or close to it and want a forged feel and a thinner topline.

Steel or graphite shafts?

Graphite is lighter and helps slower swings generate club head speed. Steel is heavier and tends to be more consistent for faster swings. Both are available across the Quantum range.
